Remedy for a rainy afternoon

It's still raining and I'm still enjoying it, particularly as I was able to get some baking time in today.

I decided to make something fitting for such an afternoon as this...


Umbrella biscuits, with blue icing and hundreds and thousands of rain drops.

Recipe:

250g softened butter
140g caster sugar
1 egg yolk
300g plain flour

Preheat oven to 200 degrees celcius

1) Mix the butter and sugar together in a bowl, using a wooden spoon.
2) Beat in the egg yolk
3) Stir in the flour until it is well combined
4) Roll out on a well-floured surface and cut desired shapes
4) Place on a greased and lined baking tray and cook for 10-15 minutes until golden brown
5) Decorate!

And the perfect drink to go with home-made biscuits?


Rose Lemonade! It is so delicious, I tried it yesterday at The Lounge, a gorgeous craft cafe just round the corner from my flat. They have regular workshops and art and crafts on display, I can't wait to go back there.
